My time of year!

The reason this is my time of the year is due to my love of anything pumpkin! Stores and restaurants have more pumpkin items available during the fall. I love pumpkin ice cream, pumpkin pie, McDonald's pumpkin spice latte, iHop's pumpkin pancakes, and pumpkin bars. Actually there is one thing pumpkin I don't like and that is the pumpkin spice creamer for coffee.

I made pumpkin bars for my son's wedding rehearsal dinner in 2009. I'm sharing a recipe that you might want to make if you love pumpkin desserts!

PUMPKIN BARS With Yummy CREAM CHEESE FROSTING!

Ingredients
  • 4 large eggs
  • 1-2/3 cups sugar
  • 1 cup canola oil
  • 1 can (15 ounces) solid-pack pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ICING:
  • 6 ounces cream cheese, softened
  • 2 cups confectioners' sugar
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons milk

Directions

  1. In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until set. Cool completely.
  2. For icing, beat the cream cheese, confectioners' sugar, butter and vanilla in a small bowl. Add enough milk to achieve spreading consistency. Spread over bars. Store in the refrigerator. Yield: 2 dozen.


WRITING NEWS: I am hoping to have Book 2 in The Bishop's Daughters Amish Series available in November! I've been busy babysitting two days a week for my grandchildren. As many of you know, we were also blessed with two daughters who were born with Down syndrome so been busy with medical appointments for them.

I'm excited about Book 2 because the focus is on Molly, the oldest daughter in the King family. Book 3 will be about Priscilla!

While I don't like pumpkin as a norm, I do like pumpkin roll because of the cream cheese filling. My favorite desert though is strawberry cheesecake.

I'm trying to cut back on the sweets but I do admit I like my mom's raisin cookies, my dad's jam-jam's, and a slice of pumpkin pie with a dollop of whip cream

I'm not generally a pumpkin fan unless it's a Pumpkin roll. Years ago, a friend gave me a recipe and I make several every year. Probably because of the cream cheese filling which means I would probably like these Pumpkin Bars! ;)

Those pumpkin rolls look delicious! I love pumpkin pie. My sister makes really tasty pumpkin bread, she won't tell me her secret. I even tried pumpkin fudge at an apple orchard/pumpkin farm once. It took more than one bite but I ended up buying a bag of it to take home. It was really good after I got used to the texture of fudge tasting like pie. I got a coupon for a free Blizzard for my birthday next week, I think I'm going to try the pumpkin pie.

I enjoy fall with all the pumpkin recipes, fall colors, farmers harvesting their crops and cooler temperatures. One of my favorite pumpkin recipes to make is Pumpkin Streusel Coffee Cake and Pumkin Cranberry Bread. Yum!

I really enjoy the taste of pumpkin desserts, but for some reason I no longer care for the texture of pumpkin pie. So I opt for any kind of pumpkin baked good like cake, cookies and/or muffins. When I'm craving a pumpkin fix and I'm low on time, the simplest recipe for pumpkin muffins is a boxed spice cake mix and a 15 oz. can of pure pumpkin. Mix together and bake in muffin tin for 15 min. at 350 degrees. It can't be any more simple and they're very moist while also low-fat. They cream cheese frosting above would be yummy on these muffins, as well. Yet, it shoots the low-fat label out the window. 😅

Your pumpkin muffins sound great. With them being so moist and flavorful with the pumpkin, I imagine you can go without the frosting. :) I do like the cream cheese frosting. I have sometimes cut the amount of sugar down when I make the frosting for carrot cake. I think it could be a little less for the pumpkin bars too.

I love a good pumpkin pie. I also make Pumpkin Nut Cookie Bars with raisins. Cream Cheese frosting makes these a family favorite.

I love Pumpkin Pie. I have teied other recipes with pumpkin in them but still the pie is my favorite. It's one of the best things about Fall.
